Roasted Carrot Dip

This dip should be made when you want a crowd stopper. At each meal that we have hosted, everyone has loved it! It is hands down delicious.

Ingredients: 3 large carrots

1 potato

1 onion

1 tbsp tahini

1 tbsp tamari

3 tbsp olive oil

1 clove of garlic

  1. Preheat oven to 350 degrees

  2. Cut the vegetables and place on baking dish and toss with olive oil, pepper and salt

  3. Leave vegetables in oven for about 30 mins until vegetables are soft. Ideally leave the carrots in slightly longer until they are slightly caramelised.

  4. When vegetables are ready, blend all ingredients together. If the pate is too thick you can use a bit of water or broth to soften it

  5. Serve as an accompaniment to any dish or serve with toast, or vegetables
